How Elasticsearch move data to new added node?

From Scale Horizontally document, when adding a new node, ES will automatic move some of the shards from existing nodes to the new added node. Can anyone help me understand how ES moves the data to the new node:
Say shard 1 (primary shard 1 is in node 1) is picked and will be moved to the new node.
During the moving process, if new document is indexed to shard 1, will it be saved to the old node (node 1), or the new node?
Say document doc-1 is saved in shard 1. During the moving process, if client is trying to retrieve doc-1, will the request go to the old node (node 1), or the new node?
