Does a visa application have a chance?

I (a Greek currently living in Austria) wish to invite my girlfriend (from China) to Greece for holidays. As my girlfriend has an even lower income than I, I am willing to append my bank statements.
From the time when I was still employed, my bank account contains a large sum of money, (over 10K Euros) which has never been touched in 2.5 years. At the moment, my only income is a Greek pension (750 Euros). Thus my balance is ever so slowly decreasing (by less than 50 Euros a month).
I can submit every kind of proof of receiving my pension. However my name will be in Greek on the proofs and in German on my Austrian bank account. Also, my pension arrives in my village in the Greek mountains in cash (thatâÂÂs quite normal there). My family takes it (I have officially authorised them) and sends it to my Austrian account. So the visa official might doubt the connection between the two sums.
My girlfriend and I have known each other since 2014, when I worked for a German university and she worked in a nearby city. However, I have no way to prove this to the visa official. Will he doubt my willingness to pay my girlfriendâÂÂs expenses? Would it help if I bought one or both of the tickets in advance?
As I currently live in Austria, my mother will let us stay in her house in Greece. She is willing to write a letter proving that. We donâÂÂt know what proof she should append, though. The papers from when she bought the house 40 years ago? ;)
Any suggestions? If there is any chance, how long may she stay? We both have time for one month, but given our finances, the official might more easily approve a 15-day stay... In reality there is not the slightest financial challenge, since you can easily live in the Greek mountains with 750 Euros. But I doubt an official from the Greek embassy in Beijing has been there :)

I would say the main problem seems to be medical insurance. I don't think your mother needs to provide anything more than a letter (with contact details). Don't know if return flight needs to be booked.

@TomasBy I guess she can buy some kind of insurance, if she books the flight via a Chinese travel agency. I donâÂÂt know, whether that is possible, if I book it online, though...

Yes, I think you (she) needs to show that she has insurance valid in Europe for that period.
